Pancake mix is relatively inexpensive. I was always a Hungry Jack girl and a box runs just under $3 at the big box store.
So why make your own pancake mix when you can pay just a few dollars for convenience? Several reasons, actually.
First, I remember the bare shelves of the Pandemic. Pancake mix was very difficult to come by. Fortunately, it taught me a valuable lesson about making my own food.
Second, essentially you are paying for a box of pantry staples plus harmful chemicals. Healthy convenience is an illusion.
Third, it’s cheaper to make your own mixes. It may be only be a little cheaper, but over time it adds up.
Overall, it’s simply better to make your own mixes. Mixes are just pantry staples with most items you already have in your kitchen. Moreover, you can control your ingredients. It’s easier to use organic flour and sugar (the main staples in my pancake mix) than it is to find a boxes organic pancake mix that’s good.
Enjoy this recipe, and experiment with it by changing up the ingredients to suit your individual tastes and budget.
